Fluffy Homemade Marshmallows

Inspired by the fluffy, homemade marshmallows recently bought at a market, Local Market Guide set about trying their hand at making them too! They are super easy and an impressive treat to share with friends.

Ingredients Marchmallow1v2
1 ½ cups caster sugar
2 tablespoons gelatine powder
1 teaspoon vanilla essence
2 cups toasted coconut
Juice of ½ lemon (For flavouring. Other juices suitable too)
Icing sugar to dust

Line a large slice tin (26cm) with baking paper

Pour the coconut into a shallow baking dish and toast lightly in the oven on low (be careful it burns quickly)

Place the sugar in a saucepan with 2/3 cup hot water and cook over medium heat, stir constantly until sugar dissolves and syrup is clear

Place gelatine powder in a bowl and pour over 2/3 cup of cold water and whisk. Pour into the hot mixture and cook until gelatine has dissolved. Stir constantly. Cool to room temperature.

Pour into a large bowl and use electric beaters on high to beat for 5-10 minutes. The mixture should be thick and glossy. Stir in the vanilla essence. Marchmallow2v2

At this stage, you can also add different flavours using natural juices (divide mixture into different batches). Experiment with lemon juice, orange juice, passionfruit etc. Approximately 1 tablespoon.

Pour mixture into the tin and leave to set for approximately 1 hour. Turn out the mixture and use a wet knife to cut.

Roll squares in toasted coconut or dust with icing sugar.

Pendle Hill Baptist Church Car boot Markets and Community Fair will be a one off event to be held on Saturday 12 September, 2015 between 9am – 3pm.

Pendle Hill Baptist Church is holding its first fair and markets in over a decade. Located in the main street of Pendle Hill, this widely advertised fair will be held to provide a family friendly atmosphere for the community.

Casual stall and car boot market places of approximately 3m x 3m will be offered at the cost of $50 for the day only to those who can provide appropriate market stall insurance or appropriate public liability policy.

On the day we will be providing a jumping castle, kid’s activities, food and coffee.

All types of stall holders are invited to give an expression of interest. Please note that due to limited space, we will not guarantee every applicant a stall as we do not wish to double up on the same kind of stalls. First applicants will be given the highest priority, with confirmation to be made as soon as possible. Stall holders will need to arrive in advance and stay for the duration of the day.

That Great Market

That Great Market is a new monthly market on Sydney’s North Shore. Set in the leafy surrounds of East Lindfield, one could be almost mistaken for being at a country village market.

Each of the friendly stallholders have been carefully selected and many are both local and new to the market scene, adding to the sense of community that the market promotes. It is refreshing to see so many unique products from fashion and homewares to decorative pieces, art, children’s products and gourmet food.

A few of our favourite finds were: the super cute rope woven bunnies and dogs at Sanctuary Homewares, the handcrafted cheese & chopping boards from Urban Ledge, vintage accessories made with recycled retro buttons and other bits & bobs at Skimmy and the inspiring story and handcrafted products & fashion made with recycled fabrics by talented women & youths in India at The Possibility Project.

Outside stalls boast everything from plants and boutique gardening tools to gourmet produce including Spice Vine with their delicious marinades, Summerland Honey from the Blue Mountains and fresh New York style bagels from Brooklyn Boy Bagels. Most essentially there is good coffee and if that’s not enough to warm you up, there is mulled wine too!

Kids will also love the outdoor garden where they can enjoy story time on the grass (with popcorn!), leaving you to browse the market at leisure.

The family run market offers a little something for everyone. Great gift shopping and great for meeting a friend too!
